Blueberry Banana Buttermilk Muffins

(Makes approximately 24 muffins)

1 teaspoon vanilla

½ cup shortening

1 cup sugar

2 eggs

2 cups flour

½ teaspoon salt

1 teaspoon baking powder

¾ teaspoon baking soda

¼ cup buttermilk

1 cup mashed bananas (approximately 2 ripened bananas)

1 cup blueberries

Mix ingredients together and spoon into cupcake liners.  Fill liners about half to three/fourths full.  Bake at 350 degrees F for 25 minutes.

Just a quick tip: When you have bananas that are past their prime, but don’t necessarily want to make banana bread or muffins at the time, just peel the banana and put the banana in a Ziploc bag in the freezer. Some people like to store the bananas in the freezer, but they don’t peel them ahead of time-this causes an unnecessary struggle when you actually want to use them & you can lose some of the liquid that you need!

Strawberry Banana Jello

This was a dinner time favorite growing up! My mom would always make this as a side to a nice roast beef dinner. Recently I was in search of a healthy side to have with dinner and this came to my mind. By using sugar free jello and fresh fruit, this is a 0 WW point side!

Use a microwave safe bowl to heat a little over 1 cup of water in the microwave until boiling (about 2-3 minutes). Since the recipe calls for 1 cup of water, I heat just a smidge over 1 cup to account for any evaporation.

In the mean time, while the water is heating in the microwave:

Grease a 9x9 inch pan with cooking spray & set aside.

In a separate bowl, dump in a package of strawberry & banana jello mix.

I like to dump in the jello mix into a bowl vs. adding the mix to the bowl of boiling water as it tends to foam up a bit and can be kind of messy. I used Walmart’s Great Value brand sugar free jello mix as it is only 50 cents and tastes like name brand. Then prepare your strawberries.

Once the water is boiling, add it to the bowl with the dry jello mix & stir quickly to dissolve the mix. If using a glass bowl, use oven mitts to remove it from the microwave as the water and the dish will be hot! Stir for 2 minutes until completely dissolved. I like to use a metal spoon, so that the red dye in the jello mix doesn’t stain any plastic spoons or spatulas.

Add the 1 cup of boiling water to the bowl with the dry jello mix and stir quickly with a metal spoon.

Use the spoon to ladle up some hot liquid to the sides of the bowl to remove some of the jello mix residue. You can also use the back of the spoon to kind of smoosh some of the hot liquid against the sides, which can also help with removing the residue from the sides. Be sure to stir on the bottom of the bowl as well, to dissolve any mix which may be there.

Then add the 1 cup of cold water to the same bowl and stir around. Be careful if your bowl does not have a pouring spout on it, hover the entire bowl over the pan and pour into the corner, that way the liquid that runs down the outside of the bowl still runs into the pan. Due to the red dye in the jello, be careful not to get the jello liquid on anything. It can temporarily stain your counter top-it will eventually wear off, or Pinterest probably has some cleaning tricks you could use.

Add the 1 cup of cold water & stir, then pour into the greased pan.

I wait until this point to chop the banana so it doesn’t turn brown.

Since it is just Josh and I, and we will probably only have this jello for one meal today (by the time the jello sets), I will just put banana slices on half of the dish since they tend to turn brown and can get liquidy if they are not eaten within the day. We will eat the portion with the bananas tonight, and we can still have good jello with strawberries remaining.

Before carrying to the fridge, be sure to make room in your fridge for the 9×9 pan. Also, you may need to have a landing spot in mind closer to the fridge to set it there a minute until the fridge opens. Chill uncovered in the fridge until set, then serve! 🙂
