A great 0 WW point side that goes great with any meal! Steamed fresh asparagus!

Take one of the asparagus spears and bend it, near the bottom until part of it naturally breaks off. (This is a trick I learned on Food Network.) Then you line them up and cut off the ends of the other spears at that point, using the snapped one as a model.

Heat about 2 inches of water in a saucepan on medium heat until boiling.

My handy steamer. It has little pegs at the bottom that let it stand in boiling water. It holds the veggies above the boiling water and the steam is able to come up through the little holes to evenly cook the food.

Once the water is boiling, drop in the steamer, and spread open the petals. Place your chopped asparagus inside. (Add a little salt)

Put the lid on and steam for approximately 6-8 minutes.

Use a fork to stab the asparagus to test for doneness-should not be much resistance when stabbing through.

When the asparagus is done steaming, remove the pot from the heat and take out the steamer to let the contents cool.

Strawberry Banana Jello

This was a dinner time favorite growing up! My mom would always make this as a side to a nice roast beef dinner. Recently I was in search of a healthy side to have with dinner and this came to my mind. By using sugar free jello and fresh fruit, this is a 0 WW point side!

Use a microwave safe bowl to heat a little over 1 cup of water in the microwave until boiling (about 2-3 minutes). Since the recipe calls for 1 cup of water, I heat just a smidge over 1 cup to account for any evaporation.

In the mean time, while the water is heating in the microwave:

In a separate bowl, dump in a package of strawberry & banana jello mix.

I like to dump in the jello mix into a bowl vs. adding the mix to the bowl of boiling water as it tends to foam up a bit and can be kind of messy. I used Walmart’s Great Value brand sugar free jello mix as it is only 50 cents and tastes like name brand. Then prepare your strawberries.

Once the water is boiling, add it to the bowl with the dry jello mix & stir quickly to dissolve the mix. If using a glass bowl, use oven mitts to remove it from the microwave as the water and the dish will be hot! Stir for 2 minutes until completely dissolved. I like to use a metal spoon, so that the red dye in the jello mix doesn’t stain any plastic spoons or spatulas.

Add the 1 cup of boiling water to the bowl with the dry jello mix and stir quickly with a metal spoon.

Use the spoon to ladle up some hot liquid to the sides of the bowl to remove some of the jello mix residue. You can also use the back of the spoon to kind of smoosh some of the hot liquid against the sides, which can also help with removing the residue from the sides. Be sure to stir on the bottom of the bowl as well, to dissolve any mix which may be there.

Stir for 2 minutes & use the spoon to dissolve the jello residue from the sides.

Then add the 1 cup of cold water to the same bowl and stir around. Be careful if your bowl does not have a pouring spout on it, hover the entire bowl over the pan and pour into the corner, that way the liquid that runs down the outside of the bowl still runs into the pan. Due to the red dye in the jello, be careful not to get the jello liquid on anything. It can temporarily stain your counter top-it will eventually wear off, or Pinterest probably has some cleaning tricks you could use.

Add the 1 cup of cold water & stir, then pour into the greased pan.

I wait until this point to chop the banana so it doesn’t turn brown.

Since it is just Josh and I, and we will probably only have this jello for one meal today (by the time the jello sets), I will just put banana slices on half of the dish since they tend to turn brown and can get liquidy if they are not eaten within the day. We will eat the portion with the bananas tonight, and we can still have good jello with strawberries remaining.

Before carrying to the fridge, be sure to make room in your fridge for the 9×9 pan. Also, you may need to have a landing spot in mind closer to the fridge to set it there a minute until the fridge opens. Chill uncovered in the fridge until set, then serve! 🙂

Sugar Free Jello & Fresh Fruit=0 WW points

Grapefruit Power Food

I never thought I liked grapefruit, that is, until my husband bought some a while back. Then, I became interested in this strange citrus fruit he found so much joy in eating! So, he let me have a taste and it was great! I discovered I actually really like it! I also discovered the neatest way to prepare a grapefruit, which also leads to the neatest way to eat it. So, I thought I would share my method as it is different from the “cut in half, dump a load of sugar on it, & eat with a spoon” method.

Use a cutting board and a serrated knife.

Cut in half from end to end (from stem to stem).

Use your knife to "V" cut out the core & dig out the seeds (3-4 tan colored seeds, about the size of a large watermelon seed)

Make a cut like this “/” on one side of the core, and a cut like this “\” on the other to make a “V” which cuts out the core strip. Then use your knife to dig out any seeds.

Each half makes 4 pieces.

Then arrange on a little plate and sprinkle with 1/2 tsp of sugar if you plan on having 2 of these bad boys in a day. The reason being, 1 teaspoon of sugar is 0 WW points. Or you could use the whole teaspoon of sugar to sprinkle over them.
